the BIG pancake

Okay, I wouldn’t really call this a pancake but that’s what the recipe was called in Vanity Fair.

More like a flat popover and it’s super delicious and so easy to make. Ready?

OVEN: Super heat the oven to 450 with an oven proof frypan in the oven (9 in cast iron in the photo)

MIX: 2 eggs + 1/2 cup milk + 1/2 cup flour + 1/4 tsp salt + whatever goodies you might like in it. Mine had onions, chevre and smoked paprika.

MELT: 2 tbsp unsalted butter in super hot pan in the oven (I brown the butter a bit to make it even more tasty!)

ADD: the batter to the frypan and pop back into the oven for 15-20 minutes until it gets a bit puffy and the top is all golden.

PUT: on your oven mitts and don’t take em off until the food is on the plate. trust me on this.

SERVE: up with a salad, or make it into a sandwich, or just squeeze lemon juice and chopped parsley all over it and fork it!
